👨🍳 Chef’s Tip: Master Cooking with Lean Beef Mince

"Lean beef mince (5% or 10% fat) is fantastic for healthier cooking, but because fat carries both moisture and flavour, lean mince turns dry, grainy, and rubbery if handled incorrectly. The secrets to success are sear-browning in a scorching hot pan without overcrowding, adding a pinch of bicarbonate of soda to lock in moisture, replacing lost fat with umami boosters, and simmer-braising gently in liquid."

1. The Bicarbonate of Soda Velvet Trick

A well-kept professional kitchen secret for lean mince is raising its pH level slightly to prevent the muscle proteins from tightening up and squeezing out water.

  • Mix ¼ tsp of bicarbonate of soda with 1 tbsp of water per 500g of lean beef mince.

  • Toss the liquid thoroughly through the raw mince and let it sit at room temperature for 15 minutes before cooking.

  • This simple step alters the protein structure, keeping the meat remarkably tender and juicy even with very little fat.

2. Scorching High Heat (Don't Crowd the Pan)

When lean mince hits a lukewarm pan, it releases its water content immediately and boils in its own juices, turning grey and rubbery instead of browning.

  • Heat 1 tbsp of olive oil or rapeseed oil in a wide, heavy-based pan or wok until smoking hot.

  • Add the mince in small batches so you do not drop the pan's temperature.

  • Press the mince down firmly into a flat layer and leave it undisturbed for 3 to 4 minutes to form a deep brown crust before breaking it up.

3. Boost Umami to Replace Lost Fat Flavour

Because fat carries savoury depth, lean beef mince needs a helping hand to build a rich, beefy backbone in sauces, cottage pies, and chilli.

  • Add 1 tbsp tomato purée, 1 tbsp Worcestershire sauce, a splash of soy sauce, or a dash of Marmite directly into the browned meat alongside your garlic and onions.

  • These ingredients supply glutamates that mimic the mouthfeel and richness of higher-fat mince without adding extra calories.

4. Simmer Low and Slow in a Rich Liquid

If making a sauce (like Bolognese or Cottage Pie filling), lean mince benefits from being braised gently in liquid rather than boiled rapidly.

  • Once browned, add your stock, wine, or canned tomatoes, cover with a lid, and drop the heat to the lowest setting.

  • Simmer gently for at least 45 minutes to 1 hour. Gentle heat breaks down any tough muscle fibres, ensuring a velvety, melt-in-the-mouth texture.

5. Avoid Making Burgers with 5% Lean Mince

While lean mince works brilliantly in sauces, stews, and taco fillings, avoid using 5% fat mince for homemade beef burgers.

  • Without at least 15–20% fat content, burgers made with lean mince shrink drastically and become crumbly and dry on the grill.

  • If you must use lean mince for meatballs or burgers, bind the meat with an egg yolk, soaked breadcrumbs (panade), or finely grated mushrooms to restore lost moisture.

How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
