Our beef mince has a great depth of flavour. Selected cuts of grass-fed beef (chuck, rib cap, flank and short-rib) are coarsely ground and combined. The resulting beef mince is perfect for making ragù, lasagne, beef burgers, chilli con carne and so many more beefy classics.

👨🍳 Chef’s Masterclass: Ultimate Classic Cottage Pie

With 10% fat beef mince, it is the absolute sweet spot for a slow-simmered Cottage Pie. It yields enough fat to build a rich, glossy gravy without leaving an oily film floating on top.

Ingredients (Serves 4)

For the Rich Beef Filling:

  • 500g Beef Mince (10% Fat): Coarsely ground preferred
  • 1 tbsp Olive Oil or Butter
  • 1 Large Yellow Onion: Finely diced
  • 2 Medium Carrots & 2 Celery Sticks: Finely diced
  • 2 Garlic Cloves: Minced
  • 2 tbsp Tomato Purée
  • 2 tbsp Plain Flour: To thicken the gravy
  • 150ml Red Wine: (Or extra beef stock)
  • 400ml Rich Beef Stock
  • 1 tbsp Worcestershire Sauce & 1 tsp Fresh Thyme Leaves

For the Crispy Potato Topping:

  • 900g Maris Piper or King Edward Potatoes: Peeled and cubed
  • 50g Unsalted Butter & 60ml Whole Milk
  • 50g Mature Cheddar Cheese: Grated (optional)

Step-by-Step Cooking Technique

1.Brown the Beef Mince:High-heat browning.

Heat 1 tbsp oil in a large ovenproof casserole or heavy skillet over medium-high heat. Add the 10% fat beef mince in batches. Cook for 6 to 8 minutes, breaking it up with a wooden spoon until deeply browned. Season with salt and pepper, then transfer the meat to a plate (leave the savoury pan juices behind).

2.Sauté the Aromatics:Build the aromatic base.

Turn the heat to medium. Add the diced onion, carrots, and celery to the pan drippings. Cook for 6 to 8 minutes until soft and golden. Stir in the minced garlic and tomato purée, cooking for 2 minutes until the purée turns a deep brick-red colour.

3.Flour, Wine & Stock Reduction:Thicken & deglaze.

Stir in 2 tbsp plain flour and cook for 1 minute to remove the raw flour taste. Pour in the red wine, scraping up all the golden caramelized bits from the bottom of the pan. Simmer for 2 minutes until reduced by half, then pour in the beef stock, Worcestershire sauce, thyme, and the browned beef mince.

4.Simmer to a Silky Gravy:20-minute gentle simmer.

Bring to a gentle boil, then lower the heat and simmer uncovered for 20 minutes until the sauce thickens into a rich, glossy meat ragù. Taste and adjust seasoning with salt and pepper.

5.Make the Fluffy Mash:While the meat simmers.

Boil the potatoes in salted water for 12–15 minutes until fork-tender. Drain well and let them steam dry for 2 minutes. Mash until smooth with the butter and warm milk. Season with salt and a pinch of black pepper.

6.Assemble & Bake:200°C (180°C fan) for 25 minutes.

Spoon the beef ragù into an ovenproof baking dish (or leave in your skillet). Pipe or spread the mashed potato evenly over the top. Rake with a fork to create ridges, sprinkle over the grated cheddar, and bake at 200°C (180°C fan) for 20–25 minutes until the top is golden and bubbling at the edges.

Pro-Chef Tips for Success

  1. Rake the Potato Top: Using a fork to create sharp peaks in the mashed potato creates tiny high points that crisp up and brown under the oven heat.

  2. Rest Before Serving: Let the pie sit out of the oven for 10 minutes before scooping. This allows the hot gravy to set slightly so it doesn't run all over the plate.

How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
