The Chef's Tip

The secret to meltingly tender braised beef isn't just time—it’s searing in small batches and managing your liquid. Diced chuck, shin, or braising steak is packed with rich collagen that breaks down into gelatinous goodness when cooked slowly, provided you set the foundation right.

  1. Dry and Season: Pat the beef thoroughly dry with kitchen paper before seasoning. Excess surface moisture turns to steam, which prevents the meat from browning properly.

  2. Sear in Batches: Heat a heavy-bottomed casserole dish or Dutch oven over high heat with a splash of oil. Sear the beef in small batches, leaving plenty of space between the pieces. Searing creates a deep brown crust (the Maillard reaction) that builds the flavour base for your gravy. Overcrowding the pan drops the temperature and causes the beef to stew in its own juices rather than getting that golden crust.

  3. Deglaze. Once the browned beef is set aside, lower the heat and cook your aromatics (onions, carrots, celery). Pour in a glass of red wine, dark ale, or rich beef stock, using a wooden spoon to scrape up all the caramelised bits stuck to the bottom of the pot—that's pure flavour.

  4. Low and Slow: Return the beef to the pot, add your braising liquid (it should come about two-thirds of the way up the meat, not drown it completely), and cover with a tight-fitting lid. Cook in the oven at a low heat (140°C / 120°C fan) for 2.5 to 3 hours.

  5. The Rest Phase: Once the beef yields easily to a fork, remove the pot from the heat and let it rest, covered, for 20 minutes before serving. Even better: braised beef tastes significantly richer the next day once the flavours have had time to settle overnight in the fridge

How does ArtisanBox work?
1. Discover & Curate: Browse 2,000+ award-winning products from the UK's finest independent makers. Mix and match world-class charcuterie, smoked fish, and pantry staples in one single, secure checkout.

2. Packed by the Artisan: We don't use dusty warehouses. Once you order, our makers are notified immediately. They hand-pick and pack your items direct from their own farm, butchery, or kitchen.

3. Direct-to-Door Delivery: Because our artisans prioritise freshness, your items are shipped straight to you. If you order from multiple makers, your treats may arrive in separate packages, ensuring each one travels the shortest distance possible to stay at its best.

Individual shipping rates apply per artisan to ensure they can use their preferred specialist couriers.
How does shipping and delivery work?
Because we're a marketplace with many different vendors, the items in your basket may come from multiple warehouse locations, in more than one shipment.

We attempt to make this clear to you throughout the process via the following:

* On each product page we show the vendor details, the estimated shipping and delivery dates and the shipping cost for a given product.
* We display estimated delivery times in basket, checkout and confirmation email.
* At checkout we display the number of deliveries and associated costs (if any) with each shipment.

Individual vendors may offer free delivery when a minimum threshold or amount is reached. If so, this is messaged in the lime green shipping and delivery information just below the buy buttons on a product page. We offer a Delivery Pass subscription that offers subsidised and free delivery as well.
How do subscriptions work?
We offer Subscribe & Save subscriptions on many products to make it easy for you to repurchase your favourites. There are no minimum order requirements and subscriptions are fully manageable through the subscriptions tab in your account. Subscriptions can be cancelled or paused at any time.
Is your meat Halal?
No, our meat is butchered to UK butchery standards for the wellbeing of the animals during slaughter and is not Halal.
How does the meat arrive via courier?
All orders are despatched in high quality packing, including woollen insulated lining and frozen cooling pads. The packaging keeps your meat cool for at least 48 hours. We send all orders on an overnight delivery service via APC couriers.
If delivering to the Scottish Highlands or the Isle of Wight, orders can take longer to arrive.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging, perfect for freezing once you receive your items if you wish.
Is the beef grass fed?
Yes, all of our beef is grass fed in Cornwall.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. You will also receive an SMS from the courier on the morning of delivery. Usually a 2-hour delivery window is communicated to you, so you know when in the day your items are arriving.

100% Fresh. 100% Guaranteed.

If it’s not peak quality, we’ll make it right—instantly. No hassle, no questions asked.
