👨🍳 Chef’s Tip: Master Christmas Stuffing with Primrose Herd
Primrose Herd’s Sausagemeat Selection Pack—featuring Traditional Pork, Sage & Red Onion, and Cranberry & Rosemary—is a game-changer for Christmas. Because traditional-breed Cornish pork has superior natural marbling, it won't dry out like mass-produced stuffing. The secret to absolute perfection is layering all three flavours into a single terrine bake with chestnuts and a splash of Cornish cider, topped with crispy bacon lattice.
1. Layer the Three Selection Pack Flavours
Instead of picking just one flavour from the pack, use all three to create a multi-dimensional "Christmas Layered Terrine":
-
Base Layer: Traditional Pork sausagemeat mixed with vacuum-packed roasted chestnuts and fresh thyme.
-
Middle Layer: Cranberry & Rosemary sausagemeat mixed with dried cranberries soaked in Cornish cider or brandy.
-
Top Layer: Sage & Red Onion sausagemeat blended with golden caramelised onions and panko breadcrumbs.
2. Bind with Fresh Sourdough Breadcrumbs & Cider
Gluten-heavy dried shop-bought breadcrumbs absorb too much fat and make stuffing heavy.
-
Use fresh, coarse sourdough or brioche breadcrumbs (about 100g per 500g sausagemeat).
-
Add 2–3 tablespoons of dry cider or apple juice to the mix. The sourdough and fruit juice bind the juices rendered from the slow-reared pork without making the texture dense.
3. Weave a Streaky Bacon Lattice Shield
Lay out a sheet of baking parchment and weave 8–10 rashers of smoked streaky bacon into a neat grid lattice.
-
Pack your layered sausage meat mixture into a greased loaf tin or baking dish.
-
Invert the bacon lattice over the top of the stuffing before baking.
-
As the oven heats, the bacon renders down into the top layer of sage and onion sausage meat, crisping into a salty, smoky crust while keeping the interior juicy.
4. Bake Uncovered Then Rest for Clean Slices
Preheat your oven to 190°C (Fan 170°C / Gas Mark 5).
-
Bake uncovered for 40 to 45 minutes until the bacon lattice is dark golden and crisp, and the core temperature hits 75°C.
-
Crucial Step: Let the stuffing rest in the dish for 15 minutes before carving. Resting allows the melted fats to reabsorb into the breadcrumbs and chestnuts, giving you clean, elegant slices that won't crumble across the Christmas dinner plate.
