👨🍳 Chef’s Tip: Master Small Individual Pork Ribs

Small individual pork ribs (often sold pre-sliced or as Chinese-style riblets) have far more exposed surface area than a full rack. If thrown directly onto a hot grill, they dry out instantly into tough meat chews. The secret to perfection is covered low-heat steaming in a foil parcel to break down the collagen, followed by a high-heat glaze blast to caramelise the sauce.

1. Dry Brine with Dry Rub

Toss the individual ribs in a bowl with a splash of oil and a generous layer of dry rub (smoked paprika, garlic powder, onion powder, brown sugar, salt, and black pepper). Let them sit for 30 to 60 minutes at room temperature so the salt draws flavor deep into the individual cuts.

2. Wrap Tightly in Foil (The Covered Steam Phase)

Preheat your oven to 150°C (Fan 130°C / Gas Mark 2).

  • Lay out a double sheet of heavy-duty aluminum foil over a baking tray.
  • Arrange the individual ribs in a single layer so they fit snugly against each other.
  • Add 2 tablespoons of apple cider vinegar, apple juice, or ginger beer to the tray.
  • Seal the foil tightly around the ribs to form a leak-proof pouch that traps the steam.

3. Low-and-Slow Bake (1.5 to 2 Hours)

Bake in the oven for 1.5 to 2 hours. Because they are small cutlets, the steam trapped inside the foil parcel gently renders the fat and softens the connective tissue around each bone without boiling away the meat juices.

4. Toss in Sauce & High-Heat Glaze Blast

Increase the oven temperature to 220°C (Fan 200°C / Gas Mark 7) or heat a grill/barbecue to high.

  • Carefully open the foil parcel and transfer the tender ribs to a clean baking sheet or wire rack.

  • Generously coat the ribs on all sides with your favorite barbecue or sweet-and-sticky Chinese plum/hoisin sauce.

  • Blast in the hot oven or on the grill for 8 to 10 minutes until the sauce bubbles, darkens, and caramelises into a sticky lacquer.

5. Serve Immediately

Unlike large whole racks that require a 15-minute rest, small individual ribs cool rapidly. Serve them hot straight from the pan, tossed with toasted sesame seeds or sliced spring onions.

How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
