Pork loin steaks are lean, tender cuts taken directly from the boneless loin muscle running along the top of the pig's back.

Framed by a thin strip of fat along one edge, they offer a fine grain and mild, versatile flavour. Because they are virtually boneless and very low in fat, they cook in under 10 minutes—making them ideal for quick pan-searing, griddling, or oven-baking when you want a fast midweek meal without sacrificing quality.

👨🍳 Chef’s Tip: Master Cooking Pork Loin Steaks

"Pork loin steaks are exceptionally lean and quick-cooking, which makes them a fantastic midweek option—but it also means they can turn dry and chalky in seconds if overcooked. The secret to perfection is snapping the outer fat rind to prevent curling, dry-brining beforehand, hot searing in a heavy pan with a butter baste, and aiming for a core temperature of 63°C before resting."

1. Snip the Fat Cap to Prevent Curling

Pork loin steaks usually feature a thin strip of fat along one edge.

  • As this fat renders and shrinks under heat, it pulls on the meat, causing the steak to curl up into a dome in the pan. This prevents the centre of the steak from making contact with the hot surface.

  • Use a sharp knife to make small cuts across the fat strip every 2cm (cutting through the fat down to the meat, but not into it). This relieves tension and ensures the steak cooks completely flat.

2. Dry-Brine for Moisture and Tenderness

Because loin muscle lacks internal fat marbling, pre-salting is crucial.

  • Season the steaks generously with fine sea salt at least 20 to 30 minutes before cooking (or leave them uncovered on a wire rack in the fridge overnight).

  • The salt draws out moisture, dissolves into a brine, and is reabsorbed into the meat. This breaks down tough muscle fibres and helps the steak hold onto its natural juices during searing.

3. Sear High and Fast in a Heavy Pan

Pat the surface of the steaks completely dry with paper towels—moisture creates steam, which prevents a golden crust from forming.

  • Place a heavy frying pan or cast-iron skillet over high heat with a tablespoon of high-smoke-point oil (like rapeseed or vegetable oil).

  • Sear the steaks for 2 to 3 minutes on the first side without moving them, allowing a deep, golden-brown caramelisation to develop.

4. The Butter Baste & Herb Finish

Flip the steaks over and immediately lower the heat to medium.

  • Add a generous knob of unsalted butter, a crushed garlic clove, and a couple of fresh sprigs of thyme or sage to the pan.

  • Tilting the pan slightly, use a spoon to continuously baste the foaming, nutty brown butter over the top of the steaks for another 2 minutes. This cooks the upper side gently while infusing rich flavour into the lean meat.

5. Target 63°C Core Temperature and Rest

Do not overcook loin steaks out of fear—modern quality pork is perfectly safe and at its absolute best when served juicy with a subtle blush-pink centre.

  • Remove the steaks from the pan when a digital probe thermometer reads 63°C.

  • Transfer to a warm plate, spoon over the pan juices, and let them rest for 5 minutes. During resting, carryover heat will bring them to an ideal 65°C–68°C, allowing the muscle fibres to relax so the juices redistribute evenly throughout every bite.

How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
