Pork collar comes from the neck and upper shoulder region of the pig, running from just behind the head down towards the loin.

👨🍳 Chef’s Tip: Master Char Siu with Pork Collar
"To get authentic Cantonese restaurant-quality Char Siu at home, you need two things: stripping the collar into long strips for maximum surface area, and basting with honey at the very end to create that glossy, charred lacquer.

Slice into Long Strips: Cut your whole pork collar lengthways into long, thick strips about 4–5 cm (2 inches) wide. Cutting it into strips ensures every single bite gets a generous coating of the sweet marinade and plenty of smoky, charred edges.

The Classic Marinade Balance: Whisk together 2 tbsp hoisin sauce, 2 tbsp Lee Kum Kee Char Siu sauce (or brown sugar), 1 tbsp light soy sauce, 1 tbsp Shaoxing rice wine, 1 tsp red fermented tofu (for deep colour and umami), 1 tsp five-spice powder, and a splash of sesame oil.

Overnight Marinade: Coat the pork strips thoroughly in the marinade, cover, and chill in the fridge for at least 12 to 24 hours. The sugars and salt need time to penetrate the thick collar meat.

Roast on a Wire Rack: Preheat your oven to 200°C (180°C fan). Line a baking tray with foil and fill it with 1 cm of water (this catches drippings so they don't burn and smoke out your kitchen). Place a wire rack over the tray and lay the pork strips on top. Roast for 25 to 30 minutes, flipping halfway.

The Honey Lacquer Glaze: Mix 2 tbsp raw honey with 1 tbsp of the leftover marinade. Baste the pork liberally all over with the honey mix and switch your oven to a high grill setting (or boost to 220°C). Grill for 3 to 5 minutes per side until the edges start to bubble, caramelise, and pick up those signature blackened, sticky bits.

Rest & Slice: Rest for 10 minutes on a cutting board, then slice thinly across the grain. Serve over steamed jasmine rice or stir-fried egg noodles with a drizzle of the sweet pan juices."*
