A gammon steak is a thick, individual slice cut from a raw, wet cured hind leg of pork (the gammon joint).
Because it comes from the hind leg, the meat is lean, dense, and firm, and cured. Cooking a gammon steak yields a deeply savoury, salty-sweet flavour profile with a satisfying steak-like texture—traditionally pan-fried or griddled and served topped with a fried egg or a grilled pineapple ring.

👨🍳 Chef’s Tip: Master Smoked Gammon Steaks with Fried Eggs
"Smoked gammon steaks topped with runny fried eggs are the ultimate British comfort dish. Because smoked gammon is naturally salty and rich, the key is rendering the fat strip first, basting the eggs in the smoky pan juices, and keeping the yolks velvety to coat the salty meat."
1. Snip the Outer Fat Rind
Smoked gammon fat shrinks rapidly when it hits heat, causing the steak to bowl up in the middle. Snip through the outer fat strip vertically every 2cm with kitchen scissors or a sharp knife. This keeps the steak completely flat so it makes full contact with the pan for a deep, even sear.
2. Render the Fat Strip First
Set a heavy frying pan or cast-iron skillet over medium heat with just a tiny drop of vegetable oil. Hold the gammon steak upright on its fat edge using tongs for 60 to 90 seconds. This crisps up the outer rind and renders down rich, smoky pork fat into the pan to cook the meat in.
3. Fry Over Medium Heat (No Added Salt!)
Lay the steak flat in its rendered fat and cook over medium heat for 3 to 4 minutes per side (depending on thickness).

Do not add salt: Smoked gammon is already cured and salted.

Look for caramelisation on the fat and a deep mahogany colour on the meat. Transfer the steak to a warm plate to rest for 3 minutes.
4. Fry the Eggs in the Smoky Pan Fat
While the gammon rests, turn the heat down to medium-low. Add a small knob of butter directly into the remaining pan fat. Crack fresh, room-temperature eggs straight into the foaming pan.
5. Baste for Silky, Runny Yolks
Spoon the hot, smoky brown butter and gammon fat over the egg whites for 1 to 2 minutes until the whites are fully set and the yolk remains rich and liquid. Season the eggs with a pinch of freshly cracked black pepper.
