The Traditional Salami from Cornish Charcuterie is made to an Italian recipe with home reared Cornish Lop pork and Ruby beef in traditional ratios of 80% pork to 20% beef. The meat is enhanced with carefully sourced herbs and spices before being gently smoked over beech chippings. The sausages are then left to mature for 10 days to 8 weeks, depending on size.

This salami is a fine example of the best in artisan British charcuterie.

Vacuum packaged for freshness, these sliced packs make a perfect rustic edition to any picnic basket, hamper or charcuterie board. 

Contains sulphites

INGREDIENTS: Pork (147%), Curing Salt (Salt 99%, Preservative: E250), Spices, Dextrose, Starter Culture (Lactobacillus Sakei, Pediococcus Acidilactci, Staphylococcus Carnosus).
