THE SAMBAL

A fiery, complex Malaysian chilli sauce that is packed full of heat, and layered with flavour.

Sambal can be found all over Malaysia, and every home has their own recipe. This one has depth of flavour and slow-growing heat from carefully-sourced ingredients that include galangal, garlic, tamarind and gula melaka (Malaysian coconut sugar).

This is an all-rounder: pour it over noodles, rice, or any home-cooked dish that needs a punch of flavour and heat. To serve it the traditional way, enjoy Malaysia's national dish Nasi Lemak: coconut rice, eggs, roasted nuts and lashings of sambal!
