"A great banghers and mash dish hinges entirely on the quality of the mash. When serving rich, heavily spiced, or herby artisan sausages, your mashed potatoes must be impossibly smooth, buttery, and robust enough to hold a pool of rich onion gravy. The secrets to success are choosing floury potatoes, steam-drying them after boiling, using a ricer instead of a hand masher, and beating in warm butter and milk for a velvety finish."
1. Choose Floury Potato Varieties
Never use waxy salad potatoes (like Charlotte or Jersey Royals) for mash, as they break down into a sticky, gummy paste.

Opt for high-starch, floury British potatoes like Maris Piper, King Edward, or Desiree.

These varieties crumble easily when cooked, absorbing butter and dairy like a sponge to yield a light, fluffy texture.
2. Steam-Dry the Potatoes After Boiling
Excess water is the primary cause of soggy, bland mash.

Peel and cut your potatoes into uniform 3cm to 4cm cubes so they cook evenly. Place in cold, generously salted water, bring to a boil, and simmer for 15 to 18 minutes until fork-tender.

Drain thoroughly in a colander, then return the hot potatoes to the empty warm pan over the lowest heat setting for 2 to 3 minutes.

Shake the pan gently as remaining steam escapes. Dehydrating the potatoes concentrates the starch, ensuring maximum absorption of fat later.
3. Use a Potato Ricer or Food Mill
Ditch traditional hand mashers or hand mixers. Hand mashers leave stubborn lumps, while food processors shear starch molecules, turning potato into wallpaper paste.

Pass the warm, dry potatoes through a potato ricer or food mill back into the warm pot.

Ricing aerates the potato into fine, feather-light strands without overworking the starch.
4. Emulsify Warm Butter First, Warm Milk Second
Adding cold dairy straight from the fridge cools the potatoes down rapidly and causes the fats to separate.

Always add unsalted butter first (around 75g–100g per 1kg of potatoes). Stir gently so the melted butter coats the starch granules before liquid is introduced.

Heat 100ml of whole milk or double cream until warm, then fold it gradually into the potatoes until you reach a silky, spoonable consistency.
5. Season Generously and Customize for Your Sausages
Adjust the flavour profile of your mash to complement the specific profile of your artisan sausages:

Classic Cumberland / Pork & Herb: Beat in 1 tbsp of Whole Grain or Dijon mustard and a grating of fresh nutmeg.
