These sausages are made from the finest cuts of pork and just the right amount of rubbed sage and dried onion pieces for a great tasting sausage. Traditionally made these sausages are great with mash and onion gravy.

A chipolata is a slim, elegant fresh pork sausage packed into a natural sheep casing rather than a thick hog casing. it is much thinner than a standard banger. Because of its slender shape, it cooks quickly, crisping up on the outside while staying juicy inside—making it the classic choice for pigs in blankets, breakfast plates, and quick tray bakes.

👨🍳 Chef’s Tip: Master Cooking Chipolatas

Because chipolatas use thin sheep casings and have a slim profile, they cook in a fraction of the time of thick bangers. The secret to perfection is medium heat, frequent turning to brown evenly without bursting the tender skins, and finishing with a knob of butter for a glossy shine.

1. Never Prick the Skins

Resist the urge to prick chipolatas with a fork before cooking. Pricking pierces the sheep casing, allowing all the internal fats and juices to escape into the pan. This causes the sausages to dry out instantly and can lead to flared splatters.

2. Start in a Cold or Low-Heat Pan

Place a heavy-based frying pan over medium-low heat with a tiny teaspoon of vegetable oil or lard.

  • Add the chipolatas before the pan gets scorching hot.

  • A gentle heat buildup renders the fat inside gradually, softening the skin so it expands without splitting open.

3. Turn Frequently for an Even Golden Crust

Cook for 8 to 10 minutes in total, turning them every minute with tongs. Because of their round, slender shape, frequent rolling ensures all sides caramelise to a uniform golden brown without scorching a flat spot on one side.

4. The Butter Baste Finish

During the final 2 minutes of cooking, add a small knob of unsalted butter and a sprig of fresh thyme or sage to the pan. Baste the foaming brown butter over the chipolatas to give them a rich, savoury aroma and a glossy caramel lacquer.

5. Oven Roasting Alternative (For Large Batches)

If cooking a large batch or making tray bakes:

  • Preheat your oven to 200°C (Fan 180°C / Gas Mark 6).

  • Toss the chipolatas in a tablespoon of oil on a baking sheet and roast for 15 to 18 minutes, shaking the tray halfway through to turn them.

Yes, the bacon contains Nitrates. We haven't found a nitrate-free cure that maintains the high quality stnadards of our pork and bacon products?
How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
