👨🍳 Chef’s Tip: Master Pork Burgers on the BBQ

"Pork burgers can easily turn into dense, dry pucks on a hot grill because minced pork has a finer texture and milder fat distribution than beef. To keep your pork burgers ultra-juicy, bursting with flavour, and fully cooked without burning on the outside, the secrets are an 80/20 fat ratio, chilling the patties before grilling, indirect two-zone heat, and glazing at the very end."

1. Shape Deep & Chill Before Grilling

  • Make an Indentation: Pork swells up in the middle as it cooks. Press a 1cm deep dimple into the centre of each patty with your thumb so they cook flat instead of puffing into golf balls.

  • Chill for 30 Minutes: Place the shaped patties on a lined plate in the fridge for 30 minutes before hitting the grill. Cold fat renders slower, preventing flare-ups and keeping the burgers from falling apart over the grate.

2. Set Up Two-Zone BBQ Heat (Direct & Indirect)

Set up your barbecue so one side has hot coals/burners (Direct Heat) and the other side has no direct heat underneath (Indirect Heat).

  • Direct Sear (1–2 mins per side): Sear the cold patties over direct high heat to establish a rich, golden-brown crust.

  • Indirect Finish (5–7 mins): Move the patties over to the cooler, indirect side of the barbecue and close the lid. This allows the heat to gently circulate and cook the interior through without scorching the exterior.

3. Glaze with BBQ Sauce, Honey, or Cider at the Finish

Pork loves sweet, tangy flavours. During the last 2 minutes on the indirect side, brush the patties with sweet BBQ sauce, maple mustard, or an apple cider glaze. Closing the lid lets the sugars heat up, bubble, and lacquer onto the burger without burning over an open flame.

4. Target 71°C & Rest

Cook pork burgers until an instant-read digital thermometer inserted into the centre reads 70°C–71°C. Move them to a warm platter, tent lightly with foil, and let them rest for 5 minutes so the juices redistribute before building your burger.

Serve on a toasted brioche bun topped with sharp cheddar, crisp green apple slices, rocket, and a dollop of whole-grain mustard mayo.

Does your Bacon contain Nitrates?
Yes, the bacon contains Nitrates. We haven't found a nitrate-free cure that maintains the high quality stnadards of our pork and bacon products?
How does the meat arrive via courier?
All orders are despatched in high quality packing including  woollen insulated lining and frozen coolling pads. The packaging keeps your meat cool for at least 48hrs. We send all orders on an overnight delivery service via APC couriers*

If deliveriing to Scottish Highlands, or IOW orders can take longer to arrive.
Will I receive order tracking?
When your order is despatched, you will receive a despatch notification from APC couriers via email. Additionally you will receive an SMS from the courrier on the morning of delivery.  Usually a 2-hr delivery window is communicated to you so you know when in the day your items are arriving.
Is the meat sent fresh or frozen?
All our meat is shipped fresh in high quality packaging perfect for freezing once you receive your items if you wish.
When will my poultry order arrive?
All our poultry from Primrose Herd is ordered fresh each week and despatched on Thursdays and Fridays. Cut off for same week despatch is 1am on Wednesdays (for same week despatches) otherwise orders with poultry will despatch the following week.
