- Dry and Salt: Pat rind dry with kitchen roll and rub coarse sea salt into the scored cuts.
- Initial Blast: Start in a hot oven at 220°C (200°C fan) for 20 minutes to bubble the skin.
- Reduce Heat: Lower to 180°C (160°C fan) and cook for 30 minutes per 500g.
- Rest: Allow to rest for 15–20 minutes so juices redistribute before carving.
