The Pork Cheek Muscle | Trimmed Pork Cheek is the lean, oval-shaped nugget of dark red meat extracted from the centre of the cheek.
Our butcher removes the outer skin, surrounding fat cap, and salivary glands, leaving strictly the masseter muscle—the hard-working muscle the pig uses to chew. Highly lean meat laced with intense internal connective tissue (collagen) rather than surface fat.Because the muscle is constantly worked, it is packed with deep pork flavour and collagen. It is ideal for slow braising, stews, and casseroles, melting into fork-tender morsels after 2 to 3 hours of gentle cooking.

👨🍳 Chef’s Tip: Master Cooking Trimmed Pork Cheeks
Trimmed pork cheeks are a chef’s secret weapon—offering a far deeper, richer flavour than shoulder or leg at a fraction of the cost. Because the masseter muscle works constantly, it is packed with tough collagen that makes flash-frying impossible. The secrets to success are trimming residual silver skin, searing whole to lock in shape, braising low and slow for at least 3 hours, and reducing the gelatin-rich pan juices into a glossy, sticky glaze.
1. Pare Away Any Residual Silver Skin
Even when bought pre-trimmed from a British butcher, pork cheeks can occasionally retain a thin, tough membrane called silver skin on one side.

Use a sharp paring knife to slide under the silver skin and slice it away before cooking.

Unlike fat or collagen, silver skin will not melt during a slow braise—it will shrink, curl the muscle, and remain unpleasantly chewy.
2. Sear the Cheeks Whole in Batches
Keep the cheeks whole rather than dicing them; their natural oval nugget shape makes for an impressive plating presentation.

Pat the cheeks completely dry with paper towels and season generously with sea salt and black pepper.

Heat a tablespoon of oil in a heavy casserole dish over medium-high heat and sear the cheeks for 3 to 4 minutes per side until deeply caramelised and brown, then set aside.
3. Build a Rich Aromatics Base and Deglaze
After browning the meat, turn the heat down to medium and soften finely chopped onion, carrot, celery, and garlic in the pan juices.

Add 1 tbsp tomato purée and cook for 1 minute to remove raw bitterness.

Pour in 200ml of dark ale, dry cider, or full-bodied red wine to deglaze the pan. Scrape up the caramelised bits stuck to the bottom as the liquid bubbles and reduces by half.
4. The Low and Slow Braise (3 Hours minimum)
Return the cheeks to the pot along with fresh thyme, bay leaves, and enough rich beef or dark pork stock to submerge the meat two-thirds of the way.

Cover tightly with a lid and transfer to a preheated oven at 140°C (Fan 120°C / Gas Mark 1).

Braise undisturbed for 3 to 3.5 hours. The cheeks are done when a knife tip slides through like soft butter, with the collagen completely transformed into silky gelatin.
5. Reduce the Sauce into a Sticky Glaze
Do not serve straight out of the braising pot, or the sauce will feel too thin.

Carefully lift the tender cheeks out of the casserole dish using a slotted spoon and cover loosely with foil to rest.

Strain the braising liquid through a fine sieve into a saucepan, skimming off any rendered surface fat.

Bubble rapidly over high heat for 8 to 10 minutes until it reduces into a glossy, dark, spoon-coating reduction. Spoon the sticky sauce over the cheeks and serve over a mound of buttery, smooth celeriac or potato mash.
