Racks and racks of the stuff, aging for up to three years each. You'll adopt a horseshoe ham, your own British culatello, and follow its path from butchery to gastronomic perfection. From exceptional heritage breed pork, we take and trim the legs, leaving the larger muscles which will age slowly and take on real depth of flavour. These are simply cured, tied and wrapped, ready for a lengthy aging process.\u003c\/p\u003e\n\u003cp\u003eYou follow it all, as we send you pictures to tell the story of your ham. Your culatello will be ready to eat at six months, superb at a year, peerless at two and otherworldly at three. Ordinary Culatello di Zibello DOP might be a few months or a year old. If you wanted to get a two or three year aged version, the cost would shoot up.
